In 2011, during grad school at UH Manoa, Dave Yarber began brewing kombucha in his kitchen. Two years later, Dave launched SKY Kombucha with a vision to make kombucha available to everyone. The company is named after his daughter Stacey's initials. 

SKY Kombucha was founded upon sustainability, sourcing local ingredients, and providing fresh and high-quality products lovingly created in small batches. In its early days, Dave sold his product at local retailers and farmers' markets. In 2015, SKY Kombucha relocated to Waimanalo and added 2 additional brands- Hoku Coffee and Oahu Kombucha. Their products feature unique and local produce and coffee. SKY Kombucha truly benefits our communities by employing local people and buying from area growers.

SKY Kombucha, Hoku Coffee, and Oahu Kombucha remain committed to their sustainability standards by proudly offering $.50 on all returns of their 12 oz glass bottles- feel free to leave your bottles at Nalu and SKY will pick them up! The bottles are sanitized and reused to create a perfect, no-waste bottle system. By offering kombucha on tap commercially, fewer bottles are shipped from the mainland as well.

Currently, all Nalu Health Bar locations carry SKY Kombucha. Our Waikiki, Ward, and Kailua locations sell bottles, while our Haleiwa location has the kombucha on tap! You can also find Dave’s Organic Hoku Coffee brand at our Kailua location.
